The coffees of Latin America are the lightest, brightest, and generally most accessible of the world’s coffees. The classic Latin American coffees manifest full body, bright acidity, and a clean, straightforward cup. As a rule they are grown at high altitudes, although climatic conditions such as latitude, cloud cover, and consistent moisture can mimic the effect of higher altitudes and produce a similar flavor profile even though grown at a lower altitude. The classic Latin American taste is based in part on the brightness and clarity of flavor achieved through wet processing. Almost all the fine Latin American coffees are washed or wet-processed, the exceptions being the better dry-processed coffees of Brazil. |

El Salvador Organic Finca Monterey Bourbon Peaberry $9.90 lb. A peaberry is when only one bean develops in the cherry which translates to a single bean getting the nutrients that would normally be split between two beans. The resulting cup is beautifully nuanced, with a sweet, bright, clean, body, and berry aftertaste.
