Voyager Series #1 - Colombia Finca Alegrias

Notes: Finca Alegrías is located in a rocky microlot filled area called Peñas Blancas. Juan David Puerta uses osmotic dehydration for this particular coffee using a signature mosto with peach and apricots. This incredibly unique processing method results in a cup bursting with juicy stone-fruit flavor.

Notes: A third generation coffee farmer, Robinson Ortiz has grown coffee on the El Girasol farm for 5 years, pushing the limits of specialty coffee. Stepping away from the traditional model of washed processing, this coffee is harvested, washed, floated, hand-selected, and subsequently fermented in sealed cans, undergoing carbonic maceration, the major contributor to the strong, vibrant flavors present in this special cup.

Variety: Heirloom, Kurume, Dega, Wolisho

Notes: Ripe cherries are delivered from 1273 cooperative members to the Adado washing station where coffees are sorted and processed. Adado Cooperative has achieved tremendous success since joining YCFCU in 2002, in large part due to the reinvestment the cooperative makes in the surrounding communities like repairing roads and purchasing improved equipment. Farmers directly benefit from these improvements which is shown through the excellent coffees they produce. This grade 1, sun-dried natural bean explodes with flavor, exhibiting apricot and blueberry notes with a milk chocolate finish.

Processing Method: Natural Anaerobic Fermentation

Variety: Yellow Bourbon, Orange Bourbon

Notes: Natural anaerobic fermentation is a processing method in which the ripest cherries are placed in shaded fermentation tanks and allowed to ferment for 50-58 hours. The coffee is then washed and moved to patios for drying. By manipulating the fermentation temperature and pH, the farmer is able to develop the wild fruity flavors often associated with this processing method, flavors like grape, guava, jackfruit, and orange.
